Ingredients
  

  • 2 pounds boneless, skinless chicken tenders
  • 1/3 cup full-fat coconut milk (for marinade)
  • 4 cloves garlic, minced
  • 1 tablespoon turmeric
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 1/2 teaspoon kosher salt
  • 18 metal or bamboo skewers
  • 1/4 cup crushed peanuts for garnish
  • 1 can (13.5-ounce) full-fat coconut milk (for sauce)
  • 1 to 2 tablespoons Thai red curry paste
  • 3/4 cup unsweetened creamy peanut butter
  • 1/2 tablespoon kosher salt
  • 3/4 cup sugar
  • 2 tablespoons apple cider vinegar
  • 1/2 cup water

Instructions
 

  • Whisk together the coconut milk, garlic, turmeric, cilantro, brown sugar, fish sauce, and salt in a bowl.
  • Pound the chicken tenders until very thin, then coat them in the marinade and refrigerate for at least 2 hours.
  • In a small saucepan, combine coconut milk, curry paste, peanut butter, salt, sugar, vinegar, and 1/2 cup water.
  • Whisk over low heat and simmer for 5 minutes until thickened, then remove from heat and let rest.
  • Preheat grill to medium heat and thread the marinated chicken tightly onto skewers.
  • Grill for 3 to 5 minutes per side until charred and cooked through.
  • Garnish with fresh cilantro and crushed peanuts before serving.

Notes

Pounding the chicken thin is essential for tender texture and quick cooking. If using bamboo skewers, soak them in water for 30 minutes before grilling to prevent burning. If the sauce becomes too thick while resting, stir in a splash of water to reach your desired consistency.
