How to Make Coconut Mango Cake
Prepare the Coconut Sponge
Preheat your oven to 160°C (325°F) and line a 6-inch round pan with parchment paper. Whisk the flour, salt, and baking powder together in a bowl. In a separate large bowl, cream the butter and sugar for about 5 minutes until it is lovely and fluffy, then beat in the eggs and vanilla. Gradually fold in the flour mixture and milk in alternating batches, then stir in the shredded coconut. Pour into your pan and bake for 45-50 minutes until a toothpick comes out clean.
Now it starts to smell amazing.
Create the Syrup and Toasted Filling
While the cake cools, boil the sugar and water for about 5 to 8 minutes until it thickens slightly into a syrup. Let this cool completely. In a dry pan, toast your extra shredded coconut over medium heat until golden brown, then set it aside to cool. Peel and chop one of your mangoes into small, even pieces.
This is where it comes together.
Whip the Mango Mousse
When you are ready to assemble, blend the second mango until smooth. Whip the cold cream until firm peaks form, adding a little sugar if you like. Gently fold in your mango puree, keeping an eye on the texture. If it starts to loosen, stop adding puree. You want a mousse that is stable enough to spread.
Assemble the Tropical Layers
Slice your cooled cake into three even horizontal layers. Place the bottom layer on your plate, soak it generously with the sugar syrup, and spread a thin layer of mousse. Sprinkle with toasted coconut and top with a layer of fresh mango pieces. Repeat this for the second layer. Finish by stacking the final layer, soaking it, and coating the entire cake with the remaining mango mousse. Chill for at least 30 minutes before serving!
Tips for Coconut Mango Cake
Achieve the Perfect Cake Texture
Make sure your butter, eggs, and milk are at room temperature before you start mixing. This simple step helps the batter emulsify properly, ensuring your cake stays soft and cloud-like instead of dense.
Don’t Rush the Cooling
It is tempting to assemble the cake as soon as it comes out of the oven, but wait until it is completely cool. If the cake is even slightly warm, the mango mousse will melt right off the sides!
